6 to 8 Good quality tomatoes
1 large Buffalo mozzarella Use ‘That’s amore’ product
1 bunch Basil
40ml extra virgin olive oil
pinch Sea salt
pinch Cracked black pepper
METHOD
- Slice tomatoes half a cm thick, for smaller tomatoes cut in half or into 1/4s
- Slice buffalo mozzarella into half cm discs also
- Arrange tomato slices and mozzarella on a plate drizzle over olive oil, season with salt and pepper
- Garnish with basil leaves
