Pancetta/Smoked Bacon

Tomato sauce

Method
- Preheat oven to 200°C (180°C fan forced)
- Dice bacon into small cubes, fry until crispy and set aside
- In a bowl, combine Worcestershire, tabasco and tomato sauce, stirring well
- Add a spoonful of sauce mixture to each oyster and top with crispy bacon bits
- Place into a hot oven for 3 to 5 minutes until sauce and bacon is crispy and hot
- Serve with fresh lemon
