Eggnog
Ingredients:
2 cups Milk
1/2 tsp Cinnamon
1/2 tsp Ground nutmeg
1/2 tsp Vanilla bean paste
6 egg yolks
1/2 cup sugar
1 cup thickened cream
1 cup rum
Whipped cream & nutmeg to serve
Method
1. In a small saucepan combine milk, cinnamon, nutmeg and vanilla and heat gently until mix begins to simmer
2. Meanwhile, in a large bowl combine eggs and sugar & whisk until the yolk turns pale
3. Gradually pour hot milk mixture over the egg mixture whisking constantly until combined
4. Add in thickened cream & rum and whisk well
5. Place in refrigerator until cold
6. Once cold pour into cup glasses & top with whipped cream and nutmeg to serve
