Oysters Rockerfeller
Ingredients:
1/2 cup Panko breadcrumbs
1 Tbs Parmesan
1 cup Spinach, chopped
1 clove crushed Garlic
1/4 cup White Wine
Pinch Pepper
2 Tbs Butter
Method
1. Preheat oven to 200 degrees (180 fan forced)
2. Melt butter over medium heat
3. Add garlic and saute until golden
4. Add chopped spinach and allow to wilt slightly before deglazing with white wine
5. Add in bread crumbs and parmesan
6. Season with pepper to taste
7. Spoon mixture onto oysters and place on baking tray in the oven until crumb is golden, approximately 3-5 minutes
